Learned this one the hard way too. What finally worked for me was getting a cheap splatter screen for like 8 bucks, the mesh kind with the little handle. Still lets steam out but catches most of the grease that would otherwise end up on your ceiling. Crank the heat, drop the sandwich, screen on top, and yeah, walk away for that minute and a half. One thing though, wipe down the area around your stove right after, because the little bit of smoke that does get out will leave a film on your cabinets over time. Your nose gets used to it but your walls will tell the truth.

Watched my brother in law pull a packer off his pellet rig two summers ago and I about fell out of my chair when I tasted it. Twenty five years of babying a stick burner and this dude just set a dial and went to bed. Still love my offset but I stopped running my mouth about pellets after that.
