Shoutout to the diner cook in Gary who told me to stop babying my grilled cheese
I was at this little spot off Broadway in Gary last month. Sitting at the counter. Watched the cook scrape a burnt grilled cheese into the trash. Third one in a row. I said man, mine always come out pale and sad, how do you get that crust. He said I was cooking it too slow. Too low. He said crank it up and walk away for 90 seconds. Eat the burnt one once in a while, you will learn where the line is. I tried it Tuesday. First one black. Second one perfect. That char is the whole point, not something to be scared of. Been chasing that crust ever since. Anybody got a trick for not smoking up the whole house when you go high heat like that?
