Knew my stand mixer was dying, took 4 hours to diagnose the real issue

Man, that is brutal. I totally feel your pain on this one. How many times have we all just ripped things apart for no reason? I once swapped out a perfectly good motherboard because of a loose fan cable. It's maddening when the simple fix hides from you for hours. The grinding must have been a real gut punch after doing all that worm gear work. At least now you know your mixer inside and out though, right?

That moment I realized I was burning my horses with hot shoes for years

Yeah that old school idea of cherry red is still pretty common. Most guys just don't know how fast that heat carries through the hoof wall when it's that hot. Dull orange is the sweet spot for sure.

A random guy at the gas pump saved my whole Saturday

Two minutes? That's wild. I'd need him to draw it on a napkin at least twice.

Saw a line cook in Seattle just toss a handful of salt over his shoulder

It sounds wild but it totally works. I do it on sliced cucumbers before they go in a salad now. You just coat them until they look frosted, wait ten minutes, then rinse. It pulls out so much water and makes them way more crisp. Works on eggplant slices too before you roast them.

Spent a whole day chasing a phantom door lock fault on a 90s Dover

Honestly that sounds like a huge waste of time for a simple wiring fix. Should have just replaced the whole junction box harness from the start instead of chasing ghosts. That's what the book time is for, right? Sometimes the "hunt" is just poor troubleshooting, making a simple job take all day. Why not start with the obvious wear points on an old unit?
