Totally get where you're coming from. My buddy at the shop swore a 14-day age on Duroc pork chops was pointless, but the difference was night and day. The meat was so much more tender and had this deep, nutty flavor that regular chops just don't have. We started offering it as a weekend special and it sells out every single time. Sometimes you just have to ignore the old advice and try it for yourself.

Oh wow, that is such a good idea! I totally get how daily numbers can mess with your head. I used to check my stats every single morning and it would set my whole mood for the day. One bad number and I'd feel like a total failure. Limiting it to once a month sounds scary, but it forces you to focus on the actual work instead of the reaction. I might try checking just once a week to start. That podcast host is really onto something.
