I don't get the obsession with fresh pasta over dried

Oh man, fresh pasta was a total game changer for me honestly. I used to think it was just a texture flex too but then I actually tried making it at home with just flour and eggs. The way it soaks up sauce is unreal compared to dried pasta. Like with a simple butter and sage sauce, the fresh stuff just drinks it all in instead of it sliding off. It falls apart softer too which sounds bad but for certain dishes it's perfect. Definitely worth the arm workout for a special dinner.

Vent: My trowel handle snapped mid-dig at a site in New Mexico yesterday

...and honestly I think people get way too dramatic about a busted trowel handle. Like yeah it sucks but you had a paint scraper and got the job done, so what's the big deal? @sethhernandez is probably right about the caliche being rough but it's not like you were excavating with a plastic spork. Marshalltown's are fine but I've snapped those too after a couple seasons. Wood handles just break sometimes, it's wood.

Isn't it wild how the whole "go in with a script" thing is basically the opposite of how we actually connect with people anywhere else? Like if you're at a backyard barbecue and someone just starts rattling off their resume, you'd think they were weird. I've noticed this same pattern with customer service too actually. When you call a company and the person on the other end just reads from a screen, it's super frustrating. But the ones who actually listen and ask what you need, those are the ones you remember and tell your friends about. It's like we've been trained to think business conversations need to be this formal performance, but really people just want to feel heard. That referral you got, it probably happened because the guy felt like you actually cared about his problem, not because you had the perfect pitch.
