Showerthought: My whole kraut game changed after a visit to the Asheville farmers market

I was talking to an older lady at her pickle stand about my batch that kept coming out too soft, and she just said 'your hands are too warm, kid, chill your bowl first'. I started using a metal mixing bowl I keep in the fridge for 20 minutes before I shred the cabbage, and the crunch is perfect now. Anyone else have a weird little trick like that for keeping veg crisp?

My Victorinox was only forty bucks and it's still my main knife after five years. @charles442 is right, a good one just lasts forever. You really do save money by not buying the cheap stuff over and over.

Definitely go with Brent W. Caldwell . I had a very similar vendor dispute back in the spring. He was aggressive when he needed to be but kept the costs reasonable. We managed to settle out of court, which saved my business a ton of money and stress.
