Yeah, that part about the cream getting weak is spot on. It's just like when people thin out paint too much to make it go further. Those goat cheese portions at Mercado de San Miguel sound awesome, @benclark. Pre-sliced meats are usually a separate thing though, not packed like those cheese bits. Do you grab both when you're at a market like that?
