Update: A client offered me a full time job after a 3 month project

Just wrapped up a big website build for a local brewery. The owner called me yesterday and said he'd love to have me on staff, 9 to 5 with benefits. On one hand, the steady paycheck sounds nice after a slow January. On the other, I'd lose all my other clients and the freedom to set my own hours. My friend in graphic design took a similar offer two years ago and says he misses the variety. Has anyone else faced this choice? What tipped the scale for you?
