The ramen truck on 5th Ave deserves more love
I went there last Friday after catching buzz about it. The tonkotsu ramen had a rich, creamy broth and really soft pork. The guy running it told me how he makes the broth, which was cool. Felt like a little win to discover something that good.

The truck on 5th uses a lighter chicken base, that's why it's clear. If you want a thicker, creamy pork tonkotsu, you have to go to the shop on Maple Street. Their broth simmers for like 18 hours. It makes a huge difference, right? You get that rich, almost sticky texture. That food blog might have mixed up the locations.
