That taco truck I hyped up ended up a total letdown
Honestly, I talked up this birria taco truck on Elm Street for weeks to my coworkers. Finally dragged three of them there last Friday, and the meat was dry and the consommé tasted like watery tomato sauce. Ngl, I felt so embarrassed I bought everyone a round of tacos from a different truck down the block to make up for it. Has anyone else had a spot go downhill fast, or did I just catch them on a bad night?

Read an article just yesterday about how food trucks (especially taco trucks) often struggle with consistency because they're operating out of a tiny kitchen with limited storage and the cook might be different each shift. Could be a Friday night rush thing where they're just trying to crank stuff out and skip steps. The consommé turning watery is a dead giveaway, like they're thinning it down to stretch ingredients. I'd give them one more shot on a Tuesday or Wednesday afternoon, see if it's different.

Used to think a bad meal at a taco truck was just bad luck, but you got me rethinking that @grantf73. Never considered how a tiny kitchen with different cooks each shift would mess with consistency that much. The watery consommé thing hits home too, I just thought they were having an off night. Makes sense they'd thin it out to stretch ingredients during a rush though. I'll try your Tuesday or Wednesday idea before writing them off completely.

Yeah that watery consommé is a dead giveaway they're cutting corners. I've seen it happen with a lot of popular trucks once they get a big following they start rushing orders and the quality tanks. Couple of things to try - check their social media before you go, if they're posting pics of fresh stock or a clean setup that's a good sign. Also go during a slower time like a Tuesday lunch, that Friday night rush is cursed for consistency. If it's bad again though don't waste another trip, plenty of trucks out there that stay solid.
