Found out food truck fryers run way hotter than home ones
I was wondering why my homemade fries never turned out as good as the ones from Tony's Taco Truck downtown. Turns out their fryers run at 375 degrees while my home one tops out at 350. I looked it up on the Fryer Safety Institute website and the difference in crunch is huge. Now I just parboil my potatoes before frying and it gets closer but still not quite there. Has anyone figured out a home trick to match that food truck crunch?

Honestly, I gotta say the Fryer Safety Institute thing is a bit off. That's not really a real official group, more like just some random blog or a brand site trying to sound legit. But your main point is solid, most home fryers cap out lower than commercial ones. Have you tried double frying your potatoes? That's the real secret from the food truck guys. Fry them once at like 300 to cook them through, then crank it up to as high as your fryer will go for a second quick fry to get that crunch. It's not the same as 375 but it gets way closer than parboiling alone.
