I accidentally left my sauerkraut out for an extra day
The taste got much better after that.

Tbh that extra day probably let the flavors develop more.

With pulled pork, 12 hours is the sweet spot. An extra day can make it WAY too soft. I tried it once and the texture was all wrong.

My buddy let his pork go for a full day once. It ended up like mush, couldn't even hold it on a bun. He said the taste was good but totally not worth it.
