Taped 30 years ago vs today: mud drying too fast is ruining my finish

Back when I started in '94, we used a heavy box mud that took forever to set. Now these lightweight mixes dry in like 20 minutes if the room is warm. Last week on a job in Denver, I had to rewet my pan three times just to finish a single joint. Is this fast drying stuff actually better for production, or are we just trading quality for speed? How do you guys keep your mud workable on hot days?

Tried mixing a splash of cold water into my pan before loading, slowed the drying way down.

Honestly I was all about that heavy box mud for years but you changed my mind after I tried keeping a spray bottle handy on warm days, it makes the lightweight stuff way more forgiving.
