Am I the only one who just learned how much salt is in restaurant butter?

I was prepping a compound butter for a new steak special at work and actually read the box from our supplier, Sysco. The salted butter we get has 90 milligrams of sodium per tablespoon, which is way more than I ever guessed. Has anyone else had a moment like this with a basic ingredient?

It's a real eye-opener for sure. Restaurant supply butter is often loaded with salt to help with preservation and shelf life. That sodium level can really sneak up on you if you're not checking. My rule now is to always taste the butter first before adding any extra salt to a dish. You end up using way less seasoning overall once you account for it. It completely changes how you approach cooking with pre-salted ingredients.

My buddy's famous cookies turned out inedible after he switched to a restaurant butter brand.

Actually, salted butter has less water, so it can last longer on the shelf.
