That chat with the cashier at Aldi last Tuesday made me rethink my rice strategy

She said she stretches a $1.50 bag of yellow rice into five meals by mixing it with frozen veggies and a can of tomatoes, and it hit me how many times I've thrown out half a bag of plain white rice. Has anyone else found a specific cheap grain or starch that just works better for stretching meals than others?

How do you keep frozen veggies from getting mushy in that?

Yeah, have you tried roasting the frozen veggies instead of steaming or boiling them? I just toss them straight from the bag onto a baking sheet with some oil and salt, then throw them in the oven at 400 degrees until they get a little brown on the edges... they come out way better than mushy. I started doing that with my rice bowls really helps stretch that cheap bag of rice into something you actually look forward to eating. For me, potatoes work better than rice for stretching meals honestly, because a 5 pound bag lasts forever and you can do them a dozen different ways without getting bored.

Don't thaw them first, just roast them straight from frozen?
