Warning: my whole Tuesday got wrecked by a single dull boning knife.

I was breaking down a side of beef for a big restaurant order and the blade just wouldn't hold an edge, which made every cut a fight and added almost 2 hours to the job, so what's your go-to brand for knives that can handle a full day of heavy use?

Oh man, that sounds brutal. I like Victorinox too, but for a whole side of beef I'd want something a bit heavier. Have you tried a stiff boning knife instead of a flexible one for that kind of work?

Switched to Victorinox Fibrox for butchering, they just keep going. The price is right for a tool you're going to beat up all day.
