I had a guy in Tulsa argue with me about aging beef for 20 minutes

He kept saying 45 days is too long and that anything past 21 days is just rot. I showed him a ribeye I had hanging for 60 days and asked him to taste it, he just walked off. Anyone else run into people who think dry aging past a month is a waste?

Right? Had a guy in Austin swear 30 day aged steak was "rotting." Never even tried it.
