That week I ran a brisket flat into shoe leather at my first competition

I was at the Smoke on the Water cookoff in Paducah last May, and my Tuesday practice run came out perfect. But on competition day Wednesday, I got distracted by a broken smoker probe and let the temp climb to 275 for over an hour. By the time I wrapped it, that brisket flat was so dry it crumbled when I sliced it, and I placed 37th out of 40 teams. Has anyone else had a good practice then completely botch the real deal?

Did your smoker probe break right as you needed it most?

@oscarc53 every damn time, mine died right as the ribs hit 195 and I nearly lost them.

Funny, my backup probe always outlasts the main one.
