Yeah, I actually tried that after watching a video from a baker in the UK. @fiona_murphy has a good point about the steam. I think people overlook how much the type of knife matters too. A really sharp lame makes those shallow cuts clean, but a dull blade can drag and mess up the whole scoring pattern. The other thing is timing. If you score too early or too late after proofing, the dough acts completely different. So many things line up just right for a good ear.

inRemember when we used to break down whole sides in the walk-in?
You ever have a new guy try to trim a whole striploin and watch him butcher it? I feel you. Last spring we got a whole pig in for a special and the kid kept asking where the loin ended. Made me miss the old days at Roselli's on 7th. We'd break down three lambs before coffee. Now everything's cryovaced and labeled. Sad but that's the business now.

Nah, putty knife is still the better tool for real precision work. Paintbrush just smears filler AROUND instead of packing it tight, so you end up with air pockets and shrinkage that need a second coat anyway. Take your time and do it right the first time instead of chasing shortcuts.

inTIL I was sanding my drywall joints completely wrong for 3 years
My neighbor Bill tried 60 grit on a bad patch in his garage last summer. He said it stripped the paper right off the drywall and left deep gouges he had to fill again with mud. @hayes.joel I'd stick with 80 grit if you want to stay safe and save time like mary_martin22 suggested.

inMy habit tracker went from messy lists to a single color-coded page
So I was totally with you on this at first lol. I thought color coding was just busy work for people who like organizing more than actually getting things done. But then I tried it with my project notes and @the_paul is right, it really does change how you track stuff. I use blue for tasks, green for completed, yellow for ideas I'm sitting on, and red for urgent stuff. It's way easier to scan a page now and see what needs my attention without reading every single line. I'm definitely not going back to plain text.
