Rant: People rushing their brisket wrap way too early
I noticed at a competition in Memphis last month, maybe 5 out of 12 teams wrapped their brisket as soon as it hit 150 degrees. That's way too early in my book. I usually wait until the bark is set and dark, like a deep mahogany color, which for me is around 170-175 on my offset smoker. You end up with soggy bark if you wrap too soon, not the good crunchy stuff. Has anyone else had better luck waiting longer before the foil boat?

Foil boat and wrapping at 150 are two different things though. A foil boat doesn't really trap steam the same way a full wrap does, so the bark stays way better even if you put it on earlier. You might be mixing up methods a bit.

Doesn't the foil boat still let enough steam out though? I've tried both ways and the boat always kept a better bark for me. Maybe it's just my smoker running hot.
