Had to choose between a fast-dry poly and an oil-based varnish for a big oak table

I was refinishing a client's farmhouse table and needed to pick a topcoat. The water-based poly would dry in 2 hours, but the traditional oil varnish needed a full day between coats. I went with the oil varnish, even though it added three days to the job. The depth and warmth it brought out in the oak grain was just so much richer. The client loved it, saying it looked 'like honey.' Has anyone else chosen the slower option and been really glad they did?

Honestly, it's just a table. The client gets a nice finish and you get paid either way, right? Three extra days for a slightly different shine seems like a lot of fuss over wood. Most people just want it to not get stained.
