Rant: My grandmother's stuffing recipe nearly ruined Thanksgiving

I was at my cousin's house last year in Seattle, trying to recreate my grandma's famous sage stuffing. I didn't realize she used old dried bread that was at least a week stale, not fresh loaf from the store. The whole thing turned into a soggy, mushy mess that nobody touched, and I was so embarrassed I almost cried. I had to run out and grab boxed stuff from the grocery store at 4 PM to save dinner. Has anyone else had a family recipe backfire because you missed one tiny ingredient detail?

Nodded along reading this because my mom used to do the same thing with banana bread. She'd let the bananas sit on the counter until they were basically black and the bread got that weird crust on top, but she swore it was better that way. I tried making it once with fresh bread and it came out soggy and fell apart. Now I leave my loaf out for a solid week too, wrapped in a tea towel, and it holds up way better for French toast or bread pudding. It's like the bread gets tougher and actually soaks up the egg mixture instead of turning into mush.
