Question about the long soak for my aunt's bean soup

I start it after dinner so it's ready by lunch the next day. Always makes me think of her telling stories while we waited.

My big blue enamel pot is always full of beans overnight. I stir in a tablespoon of white vinegar with the soaking water. It really cuts down on the foam when you boil them the next day. My mom taught me that trick, and hers never foamed over once. Makes the whole process smoother while you remember the good stuff.

Actually does the acid change how soft they get? Might keep them firmer, which could be bad for some dishes.

But who even cares about a little foam? It's not that hard to wipe the stove after, and you get softer beans in the end.
