Old timer told me to never trust a digital reader on hydraulic elevators. Was he right or just stuck in his ways?
So I had this guy I work with sometimes, been in the trade since the 80s. He saw me using a digital gauge on a hydraulic job last month and told me to throw it away and go back to analog. Said digital readers will lie to you when the fluid is hot or cold. I kinda laughed it off. But then I checked a system with both yesterday on a hot day in Phoenix, and the digital was off by 15 psi compared to the analog. Now I don't know who to believe. Anyone else run into this?

Well hot dang, now I gotta check my digital thermometer against my meat thermometer.

Well now I'll be checking mine against my meat thermometer too, just got a new steak to ruin.

Yeah "just got a new steak to ruin" really got me. I used to be one of those people who just went by feel and timing, never bothered with a thermometer at all. But seeing folks actually test their regular thermometers against a meat one makes me realize I've probably been cooking steaks wrong for years. Now I'm honestly curious if my little probe is even close to accurate or if I've just been lucky with dinner. Might have to grab a cheap meat thermometer just to see how far off I've been this whole time.
