Vent: My grinder setting hunt took a full month
I got a new light roast from Guatemala and could not get a decent cup from my pour-over setup. Every morning for three weeks, I tried a different grind size, water temp, and pour method. My friend finally came over, tasted it, and said, 'Your water is too soft.' I switched to a bottled spring water and it fixed everything in one try. Has anyone else had a coffee that was super picky about water?

Super picky about water" is right. I used to think it was all about the beans, but a bad tap water situation once proved me wrong.

Oh man, water is a total game changer... @veraj53, a month sounds about right for that kind of hunt. I keep a gallon of the cheap store-brand spring water just for my picky light roasts, it cuts out all the guesswork.
