Just realized I had to pick between a $400 truffle order or a new set of pans for the line.

I went with the pans, and now my risotto game is suffering big time. Anyone have a good supplier for smaller, more affordable truffle portions?

Ugh, that's the worst kind of choice to make! I totally get it, you need the right tools to work, but man, losing that truffle flavor is a real hit. I've seen some specialty food websites sell like, small jars of truffle peelings or truffle salt for way less. It's not the same as a fresh one, but it can save a dish in a pinch.

Nah, that truffle salt stuff is a total letdown.

It's just another case of fancy marketing over real quality. They sell you the idea of luxury but the actual product is bland and cheap. Happens with so many things now.
