Local brewery started making sausage with their spent grain, tried it yesterday

I was at the farmers market and saw a new stall from the brewery downtown. They are using spent grain from beer making in their sausage mixes. I got a sample and the taste was really different, kind of nutty and deep. The guy there said it helps cut waste and adds a nice chew to the meat. I wonder if other shops have played with stuff like this in their recipes. It could be a smart way to team up with nearby places. What do you all think about adding unusual things to meats? Might be fun to chat about at the next guild meeting.

At the farmers market last weekend, I almost walked past that brewery stall because I was looking for flowers. When I heard they put spent grain in the sausage, my jaw dropped. I mean, grain from beer making? That's like eating leftover cereal in your meatloaf, which my grandma used to do but never admitted. It does make sense to cut waste, though, and if it adds a nutty flavor, maybe it's not so bad. We should definitely bring this up at the guild meeting because I bet some butchers are already experimenting with weird stuff like coffee grounds in burgers.

Tried it once and it tasted like burnt dirt.
