Oh man, thick pork chops are the worst. They always end up dry and tough in the middle. I started cutting mine way thinner, like half an inch maybe. Game changer. They cook through fast and stay juicy. What new method did you try?

Wait, half an inch? @wendy391, that's practically a pork cutlet! I'm shocked you cut them that thin. I always thought the trick was to keep them thick but just cook them slower. My new method is a quick sear and then finishing them in a warm oven. It seems to work, but now I'm wondering if I should just get out the knife.

That quick sear and oven finish is a solid method for thicker cuts. It gives you that nice crust without overcooking the middle. Honestly, the best thickness depends entirely on your cooking method.
