Learned my cast iron pan was too hot after 8 years of cooking

Always cranked it to high for searing meat. Then my neighbor, an old line cook, saw me smoking up the whole kitchen and told me medium heat is better. Tried it on a pork chop last week. No burning, no sticking, actually cooked through right. Anyone else cook on too high a flame without realizing?

Bet your seasoning was getting wrecked too without realizing it.

Wrecked" is kinda dramatic lol I get that seasoning can get messed up but it's not like it's ruined forever. @shane_fisher37 you can just scrub it off and start over if you really messed it up that bad. I've had my cast iron looking rough before and a good scrub and some oil brought it right back. People act like seasoning is this sacred thing you can't touch but it's really not that deep. Maybe if you're cooking with acidic stuff a lot or burning things on purpose but normal use isn't gonna wreck anything
