Found a way to stretch ground beef that actually tastes good

So last week I was looking at my grocery receipt and saw ground beef was $6 a pound now which is just crazy. I remember 3 years ago when I could get it for like $3.50 easy. Anyway my aunt from Texas told me to mix in finely shredded mushrooms and grated onion with the beef. I tried it Tuesday night making tacos and used half the meat I normally do plus like 2 cups of mushrooms and one onion. My husband didnt even notice and actually said the texture was better than usual. I saved like $4 on that one meal alone. Has anyone else tried stretching meat with veggies and found a combo that works?

The trick is to grate the mushrooms instead of chopping them... they kinda melt into the meat so there's no weird chunks. I also squeeze out the moisture with paper towels first so it doesn't get watery.

Did you try a different mushroom like portobello instead of plain white ones?

Man I tried the mushroom trick last year and honestly I couldn't get past it. The texture was fine but the flavor threw me off, tacos tasted like I was eating dirt mixed with beef. My wife didn't say anything but she only ate half her portion. I think people just say they can't tell to be nice. For me I'd rather just eat less meat than pretend something else is meat. I get the price thing, ground beef is ridiculous now, but I'd rather do a can of black beans on the side and save the leftovers for another meal.
