Appreciation post: The $3 lunch I found at a gas station in Boise

I was driving through Idaho last week and stopped at a random gas station for fuel. I saw they had a hot food case with something called a 'spud bowl' for three dollars. It was just a baked potato with chili and cheese on top, but it was huge and actually tasted good. It made me think about how many cheap, filling meals we pass by. Has anyone else found a surprisingly good budget meal in an unexpected spot?

Oh man, gas station food can be a total hidden gem. I grabbed a breakfast burrito from a place like that on a road trip once, it was huge and only cost two bucks. It was honestly better than some diner food I've had. What kind of chili did they use on your spud bowl?

Right? Their breakfast tacos are shockingly good too.
