Finally realized I was overfilling my deep fryer this whole time

Honestly, I've been cooking at home for years and always filled my fryer to the max line. Then my buddy who works at a diner in Nashville saw me doing it and said I was wasting oil and making everything greasy. He showed me you only need about 2 inches of oil for most stuff like chicken or fries. Tried it last night and the food came out way crispier and I used half the oil. Has anyone else been doing it wrong the same way?

Wouldn't that depend on what you're cooking though? Deeper stuff like whole chicken thighs might need a bit more oil to submerge properly. Just curious if the 2 inch rule works for everything or if there's some stuff that still needs a fuller pot.

Whole chicken thighs" would be way too much for me to submerge in a 2 inch pot unless it's super wide. I think you're better off pan frying or baking those and saving the deep fry for smaller stuff like wings or strips.

Expand on what @cole994 said, I've had good luck adjusting the oil depth based on what I'm frying. Thicker cuts like thighs might need 3 inches or so to get full coverage, but the key is keeping that oil level just enough to cover the food without wasting any.
