Figured out my brisket stall was actually a temperature probe issue
Spent three whole cook sessions fighting with what I thought was a weird stall at 165 degrees, only to realize my cheap probe was reading 20 degrees low. Checked it against a known good one and now I'm wondering how many other folks have been misled by their gear for way too long.

Switched to an instant read thermometer myself after three ruined briskets from that same trap.

Man oh man, three briskets is a brutal tuition for that lesson. I remember thinking my probe was fine because it was just sitting there, then realized the grill temp was basically baking the outside while the inside was still cold. Instant read saved me too, but now I'm paranoid and poke the meat like a doctor checking for a pulse. Ain't nobody got time for dried out brisket because of a lazy thermometer.

Poke it like a doctor checking for a pulse, I love that @rileyb61. One thing nobody mentions is how much the ambient temp of your smoker can mess with a wireless probe's readings if the cord gets near the heating element. Idk, I used to think I was crazy checking six spots on one brisket, but now I just consider it practice for the big game.
