I finally fixed my pie crust after 6 months of guessing wrong

Honestly, I spent half a year trying to figure out why my pie crust kept shrinking in the pan. Turns out I was overworking the dough and not letting it rest in the fridge for at least 30 minutes before rolling. It took me 6 tries and a YouTube deep dive to figure out the resting part. Has anyone else dealt with a baking problem that took way too many attempts to solve?

Fought with my wife for three months over the temperature in the house. I kept saying 68 is fine. She wanted it at 72. Turns out the thermostat was just broken. A thirty dollar fix and we both get along better now. Sometimes you waste time on the wrong thing just because you refuse to look at the easy answer.

So why didn't you just check the thermostat sooner? That's the whole thing about baking too, you assume the problem is something complicated when it's usually just one dumb step you skipped. I bet you felt like an idiot spending money on a new thermostat when all it needed was a $30 fix. Same way I felt when I realized I just had to let the dough sit in the fridge for half an hour nobody told me that part. Sometimes you get so stuck in your own head thinking the answer has to be hard that you miss the simple stuff right in front of you.
