Walked into a small bakery in Portland last weekend and they were using a deck oven from the 1950s
The thing still had the original gauges on it and the owner said it's never needed a major repair. Just regular cleaning and a new thermostat once. Made me wonder if we overthink equipment upgrades sometimes. Anybody else seen old gear that just keeps going?

The warranty bylaws on that model actually have a hidden clause about collector's value being exempt from standard replacement rules lol. I looked it up once after a buddy tried to swap his grandfather's original and got denied hard. It’s buried in the fine print so most people never even know the loophole exists.
