I swore by my dough hook for everything. Then my bread got too dense.
Always let the machine do the kneading to save time. Tried mixing a simple white loaf by hand last week. The rise was faster and the crumb was lighter. Now I start every batch with a few minutes of hand work. It's a small step that makes a big difference.

Machines give me perfect consistency every single time though.

That perfect consistency every single time sounds like a dream. My coffee maker has one job and it still manages to surprise me with lukewarm betrayal. I can't even blame it on user error because I follow the same steps every morning. Honestly, I'm starting to think the machine is just moody. It's like having a pet rock that occasionally decides to be a soup stone.

Why do we assume machines always do it better? My grandma's hand-whipped cream still beats my mixer every time, lol.
