I picked a gas stove over induction and I'd do it again
My whole neighborhood kept telling me induction was the way to go. Faster, safer, all that. But I went with a gas range from a local shop here in Austin about 8 months ago. Yeah, it's a pain to clean sometimes and I worry about the air quality a bit. But I get way better control for searing steaks and making stir fry. Has anyone else stuck with gas after everyone said to switch?

My gas stove singed my eyebrows off once... still worth it for the wok hei.

Wait, you actually singed your eyebrows off? That's dedication right there. I get it though, wok hei is something you just can't fake with electric or induction. My flatmate tried to wok fry on his ceramic stove once and it was just sad, all steaming and no char. I'd probably lose a bit of eyebrow hair too for that smoky flavor
