Burnt my chicken thighs 3 nights in a row before figuring out the real problem

I kept throwing boneless thighs in at 400 for 18 minutes like every recipe said and they came out like hockey pucks on the outside and raw near the bone. Turns out my air fryer runs 50 degrees hot. Tested it with a thermometer last Tuesday. Dropped the temp to 350 and now they come out perfect every time. Has anyone else had to recalibrate their recipes based on a hot running machine?

Ngl this is basically the same issue people run into with toaster ovens too. Every machine has its own personality and you gotta learn the quirks. Had a buddy who swore his oven was broken until he realized the temp dial was off by 25 degrees and everything made sense again. Good on you for actually testing it instead of just guessing like most of us do.

@jade_johnson I get what you're saying about machines having personalities, but I think people lean on that excuse too much. Most ovens and air fryers are pretty accurate out of the box. The real issue is that people follow online recipe temps and times like they're written in stone. You dialed it in by testing with a thermometer, which is the right move. I'd bet a lot of these "quirks" are just folks not checking their equipment before blaming it.

Ha, totally agree! A lot of people just assume their appliance is broken when it's really just a little off. A quick check with a thermometer fixes most of those "quirks" real fast.
