Cooking pizza on a cast iron griddle sounded wrong until I tried it at a campground
Last summer at a campsite near Lake Okeechobee, some guy pulled out a cast iron griddle and made pizza right over the fire. I figured it would burn the bottom and leave the middle raw, no way that works. He let me watch, he used a cold dough ball and stretched it thin, then put it on a preheated grate with a lid on top. Took about 6 minutes per side and the crust actually got that charred chewy texture I usually only get from my home oven. Now I've done it twice in my own backyard when it's too hot to run the oven inside. Has anyone else had luck with a griddle or skillet instead of a traditional pizza stone? I'm curious if the thickness of the metal matters that much.
