Thought I hated seafood from trucks until a shrimp taco in Portland changed my mind

I've always avoided seafood from food trucks because I figured it would be rubbery or smell off. But last weekend I tried a shrimp taco from a truck called The Fishin' Boat near downtown Portland, and it was honestly the best taco I've had in months. Found out they get their shrimp fresh daily from a local market, which convinced me to give it a shot. Anyone else get burned by a food truck seafood dish before?

Oh wow, a food truck seafood redemption story. I always assume anything with "fish" in the name from a truck is a gamble, not a life-changing taco experience. Maybe I need to stop judging things by how much they smell like a wet dock.

Jumped on this same bandwagon last year with a clam chowder from a random truck at a state fair (turned out to be the best I've ever had). It's funny how one good experience can totally flip your mindset on something you'd written off completely.

The trick is to look for trucks that post their sourcing info on the window or social media - if they brag about fresh catch, they probably mean it. I always ask the person taking orders what they'd recommend, because if the staff is excited about a dish, it's usually a good sign. And NEVER order seafood from a truck that looks slow on a Saturday afternoon, that's just asking for trouble.
