Kombucha explosion in my pantry taught me the hard way about second ferment
I had a batch of ginger kombucha going in my closet last month. I burped the bottles every day for 5 days straight. But I got lazy and left a bottle on the counter for an extra 24 hours. That thing blew up like a soda can in a freezer. Glass shards and sticky tea went everywhere across my kitchen walls. Took me 2 hours to scrub dried kombucha off the ceiling tiles. Now I always use swing-top bottles meant for carbonated drinks and I refrigerate after 3 days max. Anybody else get caught off guard by a bottle bomb?

Man, that sucks. My buddy Dave had a bottle of strawberry kombucha blow up in his car last summer. It was 95 degrees out and he forgot it in the passenger seat after a grocery run. The whole interior smelled like a frat house fruit punch disaster for weeks. He found strawberry pulp stuck to the headliner two months later.
