I put up a fence during a rainy spell and it's holding strong, so maybe we worry too much about waiting.

Actually, that's not quite how concrete works. It needs moisture to cure properly in the first few days. The real problem is if you mix it during a heavy downpour, because all the extra water weakens the final mix. A light rain or damp hole is usually fine. Some bags even say "fast-setting" for wet conditions. I've set posts in drizzle before and they're rock solid years later.

That "mush" thing is exactly what I've seen too. It just never sets up right and the post fails.

Whoa, hold on, you set the posts in the rain? Like, with concrete? Man, I was always told that's a huge no-go. Every time I've seen someone try, the concrete just turns to mush and never cures right. The posts get all wobbly in a few weeks once the ground dries out. You must have gotten super lucky with the soil or something.
