My grandma's chili recipe from Chicago uses three types of beans. I once added too much chili powder by accident, and it became our new favorite. My grandpa's Texas chili never had beans at all. I messed up once and used a can of fire roasted tomatoes instead of plain crushed. The smoky flavor was a total game changer, and now I won't make it without them. It's funny how a simple swap can become the new normal.
