My grandma's weird pickled egg recipe finally made sense after 30 years

I spent my whole childhood avoiding those jars of pinkish eggs she kept in the basement. They looked like something from a science experiment not food. Last Thanksgiving I finally tried one on a dare from my cousin and it was actually amazing with that tangy beet juice flavor. She passed away 5 years ago and now I'm kicking myself for not getting the exact measurements down. Has anyone else had a family recipe that looked awful but tasted incredible?

The curiosity angle makes sense (I get it, I'm nosy too), but some of us had grandparents who made it very clear those jars were not to be touched until they said so. Respecting that boundary was part of the tradition.

Wait, you seriously went 30 years without trying those eggs? That's insane to me. I would've cracked one open out of sheer curiosity by week two. Family recipes with weird looks are the best kept secrets.
