I used to be a tape-and-mud purist, but a hot mud conversion changed my tune
For years I swore by all-purpose joint compound for everything, from taping to skim coating. Then about 6 months ago I had a job at a condo complex in Orlando where the GC wanted the whole place done in quick-set mud because of the humidity. I fought it at first, but after using Durabond 90 on the first few rooms I saw how much it cut down on drying time and edge cracking. Has anyone else found that hot mud works better for certain climates, or am I just late to the party?

Oh man, same here - hot mud is a game changer in humid spots for sure.

That 90 minute stuff really is a lifesaver down here in Florida, I tell ya. I had a whole house in Tampa where the AC wasn't even running yet and the regular mud was just crawling on me, took forever. But the thing I still haven't figured out is how you handle the sanding on hot mud compared to the all purpose stuff - do you find it gums up your sanding sponges way faster or is that just me?
