Finally made the gumbo my grandma always talked about, took 4 tries
After three pots that came out tasting like salty dishwater, I nailed the roux at exactly 18 minutes of stirring and my husband actually said 'this tastes like your grandma's' before I even told him what I was going for, anyone else have a dish that took way too many attempts to get right?

Roux is a beast, 18 mins is the sweet spot but even then it can go sideways on you. Took me like six tries before I stopped burning mine and just let it get that peanut butter color without panicking.
