I thought AI art was just a gimmick until I saw a piece win our local gallery's digital art contest last month.

The artist used a custom model trained on their own sketches, which convinced me it's a legit tool when used with real skill, so has anyone else had their mind changed about a digital art technique?

What makes you say that? I just see it as using the tools we have now. It's no different than using a calculator instead of doing math by hand. The goal is still to get the right answer, the method just got easier.
