Update: I've been grinding my beans way too fine for my drip machine

My coffee tasted bitter for months, but I saw a video from a roaster in Portland saying fine grinds over-extract with that method. I switched to a medium grind and it's like a whole new drink. What's the biggest 'aha' moment you've had with your own setup?

Yeah that "over-extract" thing is key. I read a whole article about how the water spends too much time with the coffee when it's too fine, pulls out all the harsh stuff. Totally changed how I grind for my french press too.

Oh man, the "over-extract" thing henderson.oscar mentioned is so real! My first press was awful too, just bitter mud. I was using the same fine grind as my drip machine. Switched to a coarse grind like beach sand and cut the steep time to four minutes, huge difference.
