Rolled my eyes at a buddy raving about his $900 espresso grinder for a year straight
I finally caved and borrowed his old one for a weekend and now I'm running a 6:00 AM brew station with a scale and a spray bottle because the difference in a 20 second pull was honestly kind of embarrassing, has anyone else had a piece of gear they swore was hype until it humbled them?

Yeah but you're missing something here. That 20 second difference you're talking about isn't really about the grinder being magic, it's about consistency. A $900 grinder just gives you the same size particles every single time, which means your water flows through the coffee the same way. Your old blade grinder was throwing out dust and boulders mixed together, so some coffee overextracted while some barely got touched. The spray bottle thing is actually just static electricity control, keeps the fines from flying everywhere. I bet if you took that same grinder and put cheap beans through it, you'd still get a better cup than expensive beans ground unevenly.
