Barista told me my water temp is ruining my pour over brews

I was at a local shop in Austin last week and this barista watched me brew at home on my phone. She said my water was way too hot, like 210 instead of 195. I switched to letting it sit for 30 seconds off boil and my coffee tastes way less bitter now. Anyone else have someone call them out on a basic mistake like that?

Yeah, I got called out at a coffee shop once for using a metal filter and they told me to switch to paper. I felt like a total amateur holding my little cone in line. Honestly though, having someone point out your bad temp or gear is humbling but beats drinking burnt sludge every morning.

Wait, you're saying hotter water actually makes it bitter? I used to think boiling was the way to go before someone set me straight too.

Same thing happened to me with my french press. Had been using boiling water straight off the stove for years. Felt like an idiot when my barista friend poured it at a lower temp and said "taste the difference." Night and day, seriously. Water temp changes everything, learned that lesson the hard way.
